As you'd expect, it depends on you as a smartphone user. Most people can do just fine with 64GB of storage, while 128GB is for those who need a little extra headroom to avoid the trouble of constantly freeing up phone storage.
JPEG files are almost too much to count at 7 MB each: 32GB = 4,700 photos. 64GB = 9400 photos. 128GB = 18,800 photos.

So even if you film clips often, if you stick to the default video recording settings, you should be more than okay with 64GB of storage. If you choose to film in 4K at 60FPS however, a minute equates to 400MB of storage being taken, so you'll fill up the phone by shooting videos amounting to about 2.3 hours.
The storage capacity of the 128 GB is double which allows you to store more information and download more programs and applications. However, you can add a memory card to the 64 GB and be ok. The main difference is the RAM. In the 128 GB you get 4 GB of RAM, where in the 64 GB you only get 2 GB of RAM.
It depends on your needs. If you don't store many photos or videos, have a lower-resolution camera, and only use a few apps, then you may be fine with 64gb. But if you take lots of pictures and videos, listen to music, and play games regularly, then you'll likely should go for smartphones with more space.
Is 64GB or 256GB better?
There is a visible difference between 64GB and 256GB storage capacities. That is because the latter has enough room to store files. Although the former also has enough storage, the storage capacity is not as large as the other.
Even 2GB will be cutting it close, so for some breathing room we'd generally suggest at least 3GB. Meanwhile, if you're using mobile data much of the day, every day, or using data intensive things like video streaming and tethering regularly, you'll probably want at least 50GB – and even that might not be enough.

On the low end, most phones now come with at least 64GB of internal storage, with many new Android devices starting at 128GB. While either amount may fit your needs on paper, it's important to remember you won't have access to your device's full storage.
Therefore, it is suggested that your phone should ideally contain 64GB of storage, even if you have opted out of the auto download option for media over mobile data and Wi-Fi. If you are on Android, then it is advisable to get the Files app by Google that uses AI to clear up the junk.
A 64GB storage device can hold more than 1 hour and 37 minutes of video at a resolution of 2.7k at 120fps. On a 64GB memory card, recording at a resolution of 1080p at 60fps allows for around 5 hours of video time.
So, if you are using a 16 megapixel(MP) camera taking jpegs, averaging 8 megabytes(MB) each, there are 1024 MB in a gigabyte (GB), this is a 64 GB flash drive, 64x1024= 65536 (total MB), divided by your image size (8 MB) 65536/8=8,192. So approximately 8,000 photos at 16MP, 16,000 at 8MP.
You'll need to get a new phone with more storage. Phones cannot be upgraded to add storage.
Why 64GB is not enough in iPhone?
Although the box might say 64GB, that's not the real amount of storage that will be accessible to you as iOS, preinstalled apps and other system resources require a portion of that for the device to function.
